Author: Christopher Ranch 1 Garlic Bulb ROASTED GARLIC By Christopher Ranch To prepare: Cut the tip (1/4" to 1/2") off several whole Christopher Ranch California Garlic bulbs and then gently remove loose outer layers of skin, slightly exposing the individual unpeeled cloves, but leaving the bulbs intact. Place bulbs cut side up in baking pan leaving a little space between each bulb. If desired, drizzle all with olive oil and sprinkle with salt, pepper and favorite herbs or seasonings. Fill baking pan with enough water to just cover the bottom of the pan (1/4"). Seal pan with aluminum foil and bake at 425º for 45 to 60 minutes or until garlic cloves are very soft. If using a clay baker: Soak pot and lid in water 10 to 15 minutes. Place prepared (as above) garlic bulbs in baker, cover and place in a COLD oven, then set at 400º. Bake for about 60 minutes. With an oven mitt, remove the cover and set it down on a cloth pad or non-metal trivet. (Baker can break when subjected to a temperature change.) Test garlic for doneness by scooping out one of the cloves with a fork. It should be soft and spreadable. If not, bake for 15 to 30 minutes more. For clay baker in microwave: Prepare baker and garlic as above. Cook on high for 2 1/2 to 3 minutes. Allow to cool. To serve: Break clove off bulb and squeeze pulp onto slice of French bread, crackers or crostini. Top with a dab of Rosemary Feta Dip and enjoy!
