Recipe: Dicks Baked Chicken w/ Breading 7/13/2014 Category: Dinner Author: Dick Cress Dick's Recipes Recipe: Dick's Baked Chicken Category: Main Dish Author: Dick Cress 5/29/2013 10 oz (about) Boneless/Skinless Chicken Breast. 48 g Dick's Chicken Breading 13/4 t Sesame Oil Blend (50% Olive Oil-50% Sesame Oil) Olive oil is ok. 1/3 c Chicken Stock (you may add a little extra if needed after 15 minutes Baking) 1/3 c Sauvignon Blanc white Wine (you may add a little extra if needed after 15 minutes Baking) Preheat Oven to 375° 1. Slice breast in half. Spray half of the oil in the bottom if an 8 inch clay baker if you have one or regular glass baking dish of similar size should be OK. Place breast halves side by side in the dish and pour broth/wine mixture over the chicken. Place in refrigerator and allow chicken to marinate for an hour or two. 2. After marinating remove breasts and set aside and pour marinating mixture into a separate container. I use a rectangular container with a tight fitting lid with 48 grams of my Chicken Breading: it is OK if more is needed but adjust the nutrition information according to the Nutritional Information below. 4. One at a time place breast into container coating the first side and with tongs turn it over to coat the second side. After flipping each breast cover container and shake vigorously to add to coating. Spray or pour remaining oil into baking dish and place breaded breast halves in the dish. I usually sprinkle a little extra breading on the breasts to make sure they are covered. 5. Pour marinating liquid into the dish and place on middle shelf of preheated oven. 6. After baking 15 minutes, using tongs, turn each breast over. Make sure there is plenty of liquid in the baking dish so that the chicken will not dry out. Return to oven for another 10-15 minutes. Oven temperatures will vary so make the appropriate adjustments as necessary.
